Super Simple Pumpkin Chili

Ingredients:

  • 1 large pumpkin (make sure you can fit it in your oven!)

  • 2 large onions

  • 1/4 cup olive oil or butter

  • 2 carrots diced

  • 1 bell pepper

  • 3 pounds ground beef or ground turkey

  • 1-2 cans kidney beans (or if you are planning ahead, soak raw beans overnight with 1 TBSP apple cider vinegar, cook slightly before putting them in the pumpkin)

  • 3 TBSP chili powder

  • 1 TBSP cumin

  • 1 TBSP oregano

  • 3 TSP salt … or more.

  • 20 oz tomato sauce or 2 1/2 cups fresh tomato puree

  • 2 cups broth (beef or chicken!)

  • 3 TBSP apple cider vinegar

Optional Toppers:

  • Shredded cheese

  • Sour cream

  • Green Onion

  • Avocado

Lets Make It:

  • Preheat oven to 400 degrees

  • Cut and clean the pumpkin

  • Heat olive oil in skillet

  • Chop veggies, set aside

  • Add onions to olive oil, cook on low for 10 min or so until translucent

  • Add carrots and bell pepper, cook until softened

  • Raise heat, add beef. Cook until no longer pink.

  • Add all other ingredients, mix and simmer

  • Add entire mixture to pumpkin

  • Bake for 40 minutes at 400 degrees

  • Serve in bowls - make sure you scoop the sides as you are serving to get pumpkin in the mix!
