Gluten Free + Dairy Free Waffles
Ingredients:
• 1 1/2 cups gluten-free flour (such as a 1:1 baking blend or almond flour)
• 1 tablespoon sugar (optional, or you can use a sugar substitute)
• 1 tablespoon baking powder
• 1/2 teaspoon salt
• 2 large eggs
• 1 1/4 cups milk (or a dairy-free alternative like almond or oat milk)
• 1/4 cup melted butter (or coconut oil for a dairy-free option)
• 1 teaspoon vanilla extract
Directions:
Preheat your waffle iron.
In a bowl, mix the dry ingredients (flour, baking powder, sugar, and salt).
In another bowl, whisk together the wet ingredients (dairy-free milk, oil, and vanilla).
Pour the wet mixture into the dry mixture and stir until combined.
Pour batter into the waffle iron and cook as per your waffle iron’s instructions.
