Gluten Free + Dairy Free Waffles

Ingredients:

• 1 1/2 cups gluten-free flour (such as a 1:1 baking blend or almond flour)

• 1 tablespoon sugar (optional, or you can use a sugar substitute)

• 1 tablespoon baking powder

• 1/2 teaspoon salt

• 2 large eggs

• 1 1/4 cups milk (or a dairy-free alternative like almond or oat milk)

• 1/4 cup melted butter (or coconut oil for a dairy-free option)

• 1 teaspoon vanilla extract

Directions:

  • Preheat your waffle iron.

  • In a bowl, mix the dry ingredients (flour, baking powder, sugar, and salt).

  • In another bowl, whisk together the wet ingredients (dairy-free milk, oil, and vanilla).

  • Pour the wet mixture into the dry mixture and stir until combined.

  • Pour batter into the waffle iron and cook as per your waffle iron’s instructions.
