Instant Pot Paleo Stew - gluten free, dairy free + grain free

This recipe is an amazing family meal and also is one of my most favorite meals postpartum.

Ingredients:

  • 1.5 lb Ground beef

  • 2 Avocados

  • 1 cup carrots thickly sliced

  • 1 cup cilantro chopped

  • 6 green onions diced

  • 1 lemon or 2 limes

  • 1 onion

  • 1 cup pumpkin puree or butternut squash

  • 2 cups bone broth

  • 1 tsp avocado oil

  • 5 cups sweet potatoes

  • 2 tsp oregano, dried

  • 3 cloves garlic

  • 1 tbsp ginger

  • 2 tsp thyme, dried

  • 1.5 tsp black pepper

  • 1 tsp sea salt

Instructions:

  • Turn Instant Pot on saute

  • Add avocado oil and diced onion. Cook 2-3 minutes, stirring occasionally.

  • Add garlic, stir, cook for 1 minute.

  • Add all remaining spices, sweet potato, carrots and pumpkin (or butternut squash)

  • Add bone broth and stir everything together.

  • Add raw ground beef in a layer across the top.

  • Pressure cook on high for 10 minutes. quick release.

  • Squeeze in lemon or lime, stir.

  • Serve topped with green onion and cilantro.
